Honey Lemon Salad Dressing

Ingredients:

  • 1 teaspoon minced garlic
  • 1 teaspoon minced shallots
  • 2 1/2 tablespoons honey
  • 1/2 cup lemon juice
  • 1/2 cup vegetable or salad oil
  • 1/2 cup olive oil
  • may add garlic, pepper, or other herbs to taste

Preparation:

Combine pepper and salt. Add garlic, shallots, and herbs. Slowly add 1/4 cup lemon juice, salad oil, olive oil, and honey. Lastly add the other 1/4 cup lemon juice, blend well, and refrigerate. If you have a salad dressing container left over from one of the store bought varieties, you can rinse this out and use it for shaking together the ingredients and for storing unused portions.

Meanwhile, here is a video by Luci Lock that demonstrates how to make an organic version of honey lemon salad dressing with a slightly different mix of ingredients. It’s similar to the recipe above, but uses a tablespoon or two of whole grain Dijon mustard in place of the salad oil.
